A hearty soup during rainy season makes us feel hugged and loved! It feels good as the tasty hot soup slides in your throat and makes your tummy full and satisfied! Ah, heavenly!
I would like to share with you this healthy, hearty, and delicious Kalabasa (Squash) Soup by La Salle Green Hills Cooking Teacher, Miss Karen Love S. Miguel.
Ingredients
- 6 to 8 cups of good quality broth
- a quarter of squash, cored and skin cut off
- 1 big potato, skin off
- a whole onion, peeled and finely chopped
- salt
- pepper
- 1 tablespoon butter
- milk or cream (optional)
Procedure
1. Heat the broth.
2. Cut the squash in cubes.
3. When the broth is boiling, drop the squash and potato cubes, lower the heat, cover and simmer until the vegetable/fruit are are soft and mushy. Turn off the heat.
4. Pour the broth and vegetables into the blender and process until smooth.
5. In another stock pan, heat the butter. Saute the chopped onion until it softens. Pour in the pureed soup and bring to boil. Season with salt and pepper before serving. You may also stir in some milk or cream
My Husband's Version
He included bacon in the dish. He cut 4 strips of bacon into small pieces, fry them into their own oil until golden brown, and set them aside. On the same oil, he sauteed chopped onion until transparent and added fried bacon before doing what remains in Procedure Number 5.
This is my husband's version of Kalabasa (Squash) Soup. My kids are picky eaters of veggies but they loved it! |
