Last month, I came across with the Yummy Chicken Mami recipe at Pretty Practical Mom's website. When I saw the photos of the cooking process and the finished product, I was literally drooling. I immediately asked my husband to buy the ingredients. Unfortunately, there was no stock of egg noodles and my craving for Mami was diverted into Pancit Canton.
Last Friday, we couldn't think of something new to eat for lunch. It was late in the afternoon and we were starving already. Good thing, I remembered this recipe.
It was easy to prepare and my kids loved it!

It's not just hearty but nutritious. It's actually a balanced meal. You'll get carbohydrates from egg noodles, protein from egg and chicken, vitamins and minerals from the veggies and spices. Kids also love meals with soup base, which can be good sources of water for rehydration especially now that we experience summer heat.
The ingredients are readily available and affordable too--- perfect for busy and budget conscious mommies.

Ingredients
1/4 chicken (chopped)
water
egg noodles
pepper
fish sauce
chicken broth cube
cabbage (thinly sliced)
carrots (thinly sliced)
spring onions
egg (optional)
garlic
Procedure
1. Saute garlic and onion.
2. Add chicken, put some fish sauce and pepper to taste.
3. Saute until cooked.
4. Put half liter of water and chicken broth cube.
5. Allow to boil for a few minutes.
6. Put the noodles and vegetables.
7. Turn off the heat. Do not overcook the vegetables and noodles.
8. Sprinkle some spring onions, egg and garlic on top.
9. Serve hot!
My Version
I didn't add fish sauce because the saltiness of the chicken broth cubes is enough.
I prefer to use Tiffany Egg Noodle Flat because it doesn't become soggy and stays aldente even when submerged in broth longer.
I want my Mami to be peppery and garlicky upon serving. Earth Flavors Crunchy Garlic tastes great! It gives texture and crunch to the soup. The combination of these two spices gives my version a kick!
